STARTER FORMULA

For one 8 fl oz cup

1 tsp hibiscus
1 tsp rosehips
½ tsp orange peel

PREPARATION

  1. Measure the botanicals into a roomy infuser.

  2. Add 8 fl oz water just off the boil—about 200°F.

  3. Cover and steep for 7–10 minutes.

  4. Strain. Notice the color, tartness, body, and finish before adjusting your next cup.

SENSORY NOTES

Bright berry-like tartness · rounded rosehip fruitiness · orange-citrus finish · deep ruby liquor

MAKE IT YOUR OWN

Softer: reduce the hibiscus. Brighter: add a little more orange peel. Rounder: stir in honey after steeping. For an iced cup, steep slightly stronger and pour over ice.
