STARTER FORMULA

For one 8 fl oz cup

1 tsp lemon balm
1 tsp lemongrass
½ tsp orange peel

 

PREPARATION

  1. Measure the herbs into a roomy infuser.

  2. Add 8 fl oz water just off the boil—about 200°F.

  3. Cover and steep for 5–7 minutes.

  4. Strain. Notice the aroma, color, body, and finish before adjusting your next cup.

MAKE IT YOUR OWN

Softer: reduce the orange peel. Brighter: add a little more lemongrass. Rounder: stir in honey after steeping.
